Overwhelmed Late Bloomer

My wife (27) and I (29) are both stuck in career paths that are rewarding, but do not pay well in our area (NW Louisiana.) We have both discussed the idea of returning to school to pursue degrees that we both started but dropped a year in. Is it possible to do this while unemployed and sustain on loans alone, or should we attempt to do this and work at the same time? Are there any kind of hardship benefits? We are only making a combined total of $60k yearly and that $60k most certainly goes faster than it comes. ANY point in the right direction would be most appreciated.
