Structuring an Effective Meteorology Class (9-12)

I took on a Meteorology class to my schedule this year, and am having a difficult time structuring and planning an effective class. More specifically, I am having difficulty incorporating assessments other than basic review questioning. Any Meteorology teachers out there willing to offer me some insight?
