Including interviews in a thesis

Hi everyone. Hope this is a good place for this question. A significant part of information collection process for my thesis project consisted of interviews. I contacted professionals in a technical field and asked to answer a series of questions regarding practices for solving a specific problem. In most cases, communication was via emails and sometimes extra questions were asked. How could I add the interviews to the appendix and cite in the results section? Are there any common practices of including interview texts in dissertations?
