classroom management/general organization strategies for large class sizes

Hello fellow educators, I teach high school physics in a state/district that allows up to 39 students per class (crazy for a science class, especially for me, from growing up in Chicago suburb schools where a big class was around 25).

I am reaching out to you to see what general organization strategies you have developed to help keep track of several things I've been struggling with: Many days have 3-5 absences per period, out of 5 periods, so sometimes I have 10-20 students absent per day. I'm having a hard time keeping track of who needs to turn in what and when (students have 1 extra day per day missed to submit missed work)

Resulting from this, I have a backlog of students who have turned in work, but I have not yet gotten around to entering in their grades for either homework or quizzes/tests, or lab makeups.

Currently, I have 1 "absent" bin, in which all students turn in absent HW, I try and get those entered in at the end of every day. That isn't so much the problem as keeping track of respective due dates for individuals, so many might turn in an assignment from a date they missed 3 days ago, and still receive full credit. When finished grading, I put that into period-specific shelves to be returned.

I'm hoping for some input on your systems to track absences and due dates for those respective absences. Willing to modify my current system, or scrap it all together.

Extra Credit if you're willing to share classroom management for large classes. Mine isn't too bad (honors, but freshmen), but there's always room for improvement.
