Which Major Should I Choose?

I know EXACTLY what I would like to do for a living for the rest of my life, but I don’t know where to start. I want to rehabilitate worn out tracts of land and turn them into permaculture food forests. I want to build up the soil, plant as big a diversity as I can, and possibly raise a few animals. I’ll definitely be doing this for my own property, but how could I design and implement projects like this for a living as like a contractor or consultant for other people’s property? What type of education would I need, and where should I begin?
