Classroom Engagement Ideas? (Online HigherEd Courses)

I have been teaching in HigherEd for about seven years. Some of my courses are now online, and I genuinely miss the interaction from a face-to-face setting. I've used the Discussion Forums within various LMS's and other tools like VoiceThread, but I feel like there has to be a better option out there.

Does anyone have any ideas on something that could be used in addition to the traditional forums or something else that will help to break up the monotony of written discussion forums?

For the last six months, I've been interacting in the discussion forums using video/audio, but while students say they enjoy that I'm using this feature in the course, they seldom use the audio/video function.

I'm open to any and all ideas that can make my online courses a bit more engaging as the traditional discussion forum simply isn't cutting it for me (or my students tbh) anymore.
