Why do my references need to be current or former supervisors?

It’s so awkward!! I resigned my last job. Before that one, I don’t even know them anymore. Can’t they just go down the list in my job history and call if that’s what they want? Also what if my current supervisor doesn’t know I’m planning to leave??? So weird
