What are college courses that you can practically learn on your own? (HUMMS Oriented Courses)

I'm a Junior Highschool student preparing for Senior High, and I was just wondering what could be my options for college since I'm also preparing which Track to choose in SHS. My choice is HUMMS, and I'm aiming for Pol Sci + Economics for a double major. But I also want to study Criminal Justice, History, Philosophy, Psychology, English, Sociology, and Educational Policies, what do I do? How do I choose a course that will guarantee in achieving proper and substantial knowledge for what I dream of being? And if I do settle upon just 1-3 courses, are the other courses achieveable by self-study?

PS: I aim to be a lawyer and public servant (public administration, senate, etc.)
