Why is written exam the only form of testing knowledge

Its a simple question

why is all the concept of "proving" knowledge only done through a vigorous and stressful non stop 3 hours exam?

I never understood the concept of this, why do you need to prove to this degree that you know something RIGHT NOW and without help, with only your memory, to answer something.

Its only been less than 3 months and you have passed through tons of knowledge from all different kind of classes. sometimes I even wonder in which field of life you have to know something RIGHT NOW and that you dont have access and/or time to check and verify for the correct information?

sure during a job you will eventually learn most of it by memory and experience or you will be able to say something about the question being asked even if it pretty precise without looking up info much, but here, we are talking about barely even 3 month in, you started to learn, why are we asking to know so much in term of memorization?

Also I dont get how precise question on knowledge you learned from pages and pages of book, notes and whatnot is really a proof of anything?

Example: I did some language class, where in the 2nd session we were up to have learned more than 150 words of the language but then have exam question like "translate me this sentence", ok? and but I just learned more than 150 words, how is testing just a few random one proof of knowledge of the language here? yeah I know maybe by memory 100 of them and you questioned in the 50 I had more trouble...

Anyway, I feel like its suck because I would really like to do university but I cant deal with how class and exam are done, I have too much trouble going through pages of book and repitition
