Is it possible to get into a good college with minimal AP, IB, or Honor classes?

I'm currently attending a public High School that isn't known for much. Currently, I'm a Junior with a 3.65 GPA (not considering the straight As I got from last semester as well as an A- in my weighted Japanese class). A little backstory: I used to live in Thailand and moved to America around 7 years ago (currently 17), and wasn't, by any means, on top of any of my classes, C average. However, that did change for the better when I started high school. During my first year I started reading regularly and writing on a daily basis in order to be more familiar with the language (apologies for my subpar writing skills, if I did mistype anything, you all now know why). No matter how hard I worked, I still was only able to pull a couple of As and mostly Bs during my Freshman year. Nevertheless during the second semester of my Sophomore year, when everything went back to normal from Covid, I was able to pull all As and eventually got my Japanese weighted class grade up to an A- as well, mind you that that was the only “special” class I took during that year. I would also like to add that I will be doing Calculus BC which is 1-2 years more advanced than anyone else in my school. Next year, Junior year, my counselor encouraged me to take an AP social studies class as well as a College Japanese Class, which will be the only “special” classes I will be taking. On top of that, I was invited to the IB program by a couple of teachers that taught me during Freshman year. I just don’t know how badly that will affect my mental health. Any suggestions or personal experience? I’m also not involved in any extracurricular after school activities nor am I in any clubs.
