Ideas for framing an independent study around language and/or literary arts?

I’m an adult learner who decided to finish college and get my degree last year. About 15 years ago I completed my first 2 years of college at an alternative university where I studied design and sustainability. I left and went on to take community college classes in the sciences and cultural and language studies. Years later I have returned to the original university I attended and completed courses in creative writing and literary studies, including Spanish language books and authors. I will have to complete my upcoming final quarter doing an independent study (because the school is going back to in-person classes and I live in another state).

My question is: does anyone have ideas for what would make sense, in the context of my educational trajectory, for me to design an independent study around? I was thinking a translation project but not sure my foreign language skills are good enough. But maybe that’s ok because the point is to learn?
